How does a New Zealander who grew up in South Africa ends up buying an iconoclastic estate in Roussillon? This isn’t exactly an everyday occurrence, but it is for Tom Lubbe from Domaine Matassa.

In the late 1990s, Tom was working on the only farm in South Africa that used indigenous yeasts and lower yields. Interested in working with Mediterranean varieties, Tom managed to get a three-month internship at the legendary Domaine Gauby in the town of Calce. Gérard Gauby quickly befriended Tom and asked him to return for three consecutive vintages as a cellar assistant. During that time, Tom met his wife Nathalie, who happens to be Gérard’s sister.

Tom works with many of the traditional Catalan varieties: Carignan, Mourvèdre, Grenache (mainly Lladonner Pelut, the old Catalan strain of Grenache), Grenache Gris, Muscat d’Alexandrie and Muscat de Petits-Grains. The vineyards are worked naturally and without chemical aids. The wines are bottled without filtering or clarifying. Sulfur, which Tom used judiciously in the past, has not been added to any production since the 2015 vintage.
